As soon as the calendar flips to November, eager cooks and hostesses pour over cookbooks, websites, and boxes with treasured stained recipes with thoughts of Thanksgiving dinner. Do you love to recreate the same traditional meal every year, or are you constantly searching for something new or a new spin on an old favorite?
Although we host Thanksgiving dinner at our Farmhouse Restaurant, we wanted to share one of the most popular fall recipes from the Inn at Turkey Hill.
We weren’t sure whether to call this a Thanksgiving recipe or a fall recipe; it includes one of the iconic ingredients of Thanksgiving — pumpkin. However, this recipe uses pumpkin in a form not usually seen at the Thanksgiving table — as soup! Before you cringe, let us tell you that this soup smells and tastes like liquid pumpkin pie. If that doesn’t intrigue you, you must not like pumpkin! And with beer in it, what’s not to like?
It is the creation of our chef Jim Hahn. You may see it on our Farmhouse Restaurant menu and other offerings, like Beer Braised Mussels, Pan Roasted Salmon, or Black Garlic Ribeye Steak. Now that we have your mouth watering, here is the Guinness Pumpkin Bisque recipe:
Guinness Pumpkin Bisque
Serves 10 – 12 people
Ingredients:
1 – 16 oz. can of Guinness Draught 1/2 C salted butter ½ medium yellow onion, minced 1 ½ tsp minced garlic 2 – 29 oz cans pumpkin puree 1/4 tsp almond extract 2 C vegetable stock 2 C heavy cream 2 C half and half |
1 Tbl ground cinnamon 2 ½ tsp ground nutmeg ¾ tsp ground cloves 1/2 C dark brown sugar 1 C light brown sugarToasted pumpkin seeds for garnish |
Directions:
- In a stock pot, saute minced onion & garlic until soft in butter
- Add Guinness, bring to a boil, and reduce by half.
- Add pumpkin puree and almond extract; whisk until smooth.
- Add stock, cream, and half and half; bring to a simmer.
- Use an immersion blender to smooth all ingredients.
- Whisk in spices and sugars and simmer for 30 minutes, stirring regularly.
- Garnish with toasted pumpkin seeds
